Recipe of the Week! (Lentil Soup)

Lentils are a terrific source of fiber and protein. They are easy to prepare and delicious! (Particularly if you live in a place where fall weather means a serious cool down!) This recipe is delicious, nutritious and extremely affordable to make. The entire batch can be made for less than $5.00.

Lentil Soup

Ingredients:
1 onion, chopped
1/4 cup olive oil
2 large carrots, diced
2 stalks celery, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 can crushed tomatoes
2 cups dry lentils**
8 cups water or vegetable or chicken broth
(**If using water, add 2 T. of boullion powder for flavor!)
salt to taste
ground black pepper to taste

Preparation:
In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until tender. Add in garlic, oregano, and basil and cook for 3 more minutes. Add lentils and stir, then add water and tomatoes. Bring to a boil. Reduce heat and simmer over low heat for at least 1 hour.
